Some Recipies

I will take some pictures later, but I have been busy playing the "faux-single-mom-who-has-not-prepared-for-single-momdom"game... and now that Liala is in school, and Kjellsen has speech therapy... running Kjeld's FA papers around... grocery shopping... and continuing to forget to deposit a client check... I am feeling a bit busy.

One thing I look forward to every day is Dinner. So here are some recipes that I have developed for some yummy comfort food after a LONG day! A quick disclaimer, I don't used measuring cups, EVER... Kjeld makes fun of me a lot. But I really can't stay focused long enough to measure, and heck my dad never used measuring cups... So be prepared for a lack of measurement.

Hearty Veggie Soup

  • 3tbsp of Olive Oil (canola/corn/grape... etc works well too)
  • Vegetable stock (I buy the boxes... I think it's a pint?! so 4ish cups?)
  • beef stock (you can double veggie stock or use chicken stock)
  • water
  • 1 large sweet onion
  • 1 leek
  • 1/2 head of purple cabbage
  • 1 turnip
  • 5 baby red potatoes
  • 5 baby purple potatoes
  • 3 cups of cherry tomatoes smashed (you can blend but its fun to smash your tomatoes by hand, at least give it a try before you knock it)
  • lentils
  • 1 clove of garlic
  • onion salt (seasoning salt/sea salt/table salt all work)
1. Get a big soup pot (I am cooking for five w/left overs so this recipe needs a BIG pot), and crank your stove up to medium high. Put the OIL in the pot. While the oil is heating cut up your onion and your garlic, throw that in the pot and let it sizzle for two minutes.
2. Throw in your vegetable stock and beef stock. Now if you haven't already smashed your tomatoes do that, and throw them in the pot!
3. Cut up and throw in the rest of the ingredients.
4. Season with onion salt to taste!
5. bring to a boil for about 30mins. Then turn it down to Low, and let it sit until all the veggies and lentils are tender!


Yummy Chicken and Veggies
So this one is super simple, but that is what is SO good about it.

  • Enough Chicken Breasts to feed your family, chopped into bite sized pieces
  • Lemon Pepper
  • Onion Salt
  • 4tbps Oil
  • Sweet Onion
  • purple cabbage or bok choy
  • baby purple, red and yellow potatoes (can be all of one kind, TJ's has a mixed bunch and it looks pretty)
  • Heirloom tomatoes or cherry tomatoes
1. Heat Oil at medium high in a skillet. When nice and hot throw in your chicken, season with lemon pepper and onion salt. bring temp down to medium and cover, stirring occasionally. When chicken is cooked through turn it to low until your veggies are done.

2. Cut up and throw all of the veggies into a steamer. Throw the Onion salt on top while steaming. Do this until veggies are tender.

3. Serve together.

The perfect Sandwich.
  • Onion Bagel
  • hummus
  • cream cheese
  • sweet onion
  • heirloom tomato
  • avocado
  • roasted turkey breast sandwich meat.
1. Half Onion bagel. Toast Bagel. Spread hummus on one side, and cream cheese on the other.
2. mince enough onion to spread on the hummus side of the bagel... spread onion on hummus side.
3. Slice and add avocado and tomato (however little or much you like) to the sandwich. Add turkey slices...
4. Halve and enjoy!!!
