"Experimental recipe" -- turned out fantastic, but I don't have exact measurements.

2tbsp cooking oil
3 green onions sliced finely.
1 baby bok choy
3 cups mung beans (after being soaked over night)
a bunch of asparagus
1 medium potato
salt water (1tsp to 1cup water)
spinach Punjab sauce
1. heat cooking oil on medium heat in a deep skillet. When warm, add veggies. let cook for 2-3 minutes stirring occasionally.
2. cover veggies with salt water, bring to a low boil, then let simmer for 10-15 minutes, or until water is nearly gone.
3. Add in enough punjab sauce to lightly coat the veggies. Serve with Naan.
Naan - flat bread

4cups flour
1tbsp salt
1cup warm milk
2 eggs or the equivalent in egg replacer.
cooking oil.
1. In a small dish combine the yeast warm water and sugar, stir gently. (if you use active yeast, let rest for 5-10 minutes, if using bread machine yeast let sit 3-5minutes).
2. In a large bowl combine the flour and salt. Make a well in the flour. add milk, eggs, yeast mixture and a tablespoon of oil.
3. Knead dough for 5-10 minutes. let rise in lightly oiled bowl , covered with a damp cloth, until it doubles in size. Separate bread into 8-10 balls. cover and let rise for 10 minutes.
4. roll out on oiled surface, make sure they get very thin! Cook in a pan or in the oven, until they are golden brown with some darker spots. Serve immediately!

Elsa didn't want to wait for anyone else to get to the table before she started eating!!
